Today’s word is used mostly in written English to describe someone that never seems to look any older. For example, “She was beautiful and seemingly ageless.” In other words, she still looks as young as she did 10 or 20 years ago.
Another meaning is that it is impossible to tell how old something is. This is also mostly used in written English, but it is not just used to describe people, it can also describe things. For example, “The ageless oceans” or “She tried eating the food and drinking the water that made the gods ageless and immortal.” As you can see, these are not the sorts of things you’d say in everyday English, however, if you read novels, you might come across this kind of sentence.
