We often talk about flavors mellowing, for example a cheese or wine might mellow with age. However, it’s not just food; we can describe people as mellowing, too. If someone mellows, it means they become kinder or less extreme in their behavior – and this is usually a result of growing older. For example, a father might mellow once his own children have kids and he becomes a grandfather. It can also be because of a life experience such as getting married; “Marriage has mellowed him.”
