Rejoice is a rather formal way of saying “be happy”, or “be glad.”
It is often used in news reporting, for example, “The crowd waiting outside
the courtroom rejoiced when they heard the verdict.”

It would be unusual to use this word to describe your own actions, unless
you specifically wanted to be formal, or a little bit unconventional. For example:

Q: What is she doing?
A: She is rejoicing in the love she has found with Andrew. (Talking about another
person, so this is OK.)

Q: What are you doing?
A: I’m rejoicing in the love I have found with Andrew. (OK, if you want to be a little
bit dramatic.)
A: I’m (just being) happy in the love that I have found with Andrew. (More usual
way of saying that you’re happy to be in love.)
