If you pursue an activity, interest, or plan, you carry it out or follow it. We often talk about following your interests when choosing what to study at university, or what career to pursue. This is a formal word, so it is more likely to be used to talk about careers rather than hobbies, but it is still fine to talk about pursuing interests and hobbies too.
