Usually the word “carve” is used for things like stone or wood.
For example:

He carved a beautiful stone sculpture.
The wooden doors were carved by a famous artist.

However, you can also use “carve” or “carve out” when talking about your
career. For example:

He has carved a niche for himself as a painter.
She is hoping to carve out a more responsible position in the company.

And “carve up” is used with a negative nuance, when you disapprove of
how someone has divided something into small parts.

The new president is trying to carve up the company and sell it.
